Multi seeds bread
I just came back from UK, this time I spent whole month with my sister and had a very good time.
200 g ........................... Bread flour
1tsp .............................. Instant yeast
2 tbsp ........................... Granulated sugar
1/2 tsp .......................... Salt
130 g ............................. Milk
30 g ............................... Rice bran oil shortening
20 g ............................... Pumpkin seeds
15 g ................................ Sun flower seeds
15 g ................................ Sesame
Topping
....................................... Pumpkin seeds, Sun flower seeds, Sesame
Put the flour, sugar and yeast into a bowl, whisk to combine.
Put salt into the bowl and whisk to combine.
Pour milk into the bowl.
Mix with a spatula.
Then use your hand to gather the dough into a ball, and remove from the bowl.
Knead for 4-5 minutes.
I use rice bran oil shortening.
Knead the bran oil shortening into the dough.
Knead for 4-5 minutes or until the dough is smooth.
Knead seeds into the dough.
Brush a bowl with rice bran oil shortening.
Place the dough into the bowl, cover.
Let it rise until double in size or about 1 hour.
Cut the dough into 6 equal pieces.
Roll each piece into a ball,
Brush 18 cm round cake pan with shortening.
Brush the dough with water, press into the seeds.
Place the dough into the prepared pan.
Press lightly to level the dough.
Cover and Let it rise for 30-40minutes.
Preheat an oven to 190℃.
The dough will be almost double in size.
Cover with aluminum foil.
Bake for 18 minutes.
Remove the aluminum foil, and bake for 8 minutes more.
Until golden brown.
It's a long vacation, I didn't do anything much, just slept, took photos and the most important thing: ATE. The most delicious thing that I ate this time was bread, or specifically sourdough!
I made sourdough by myself too, but still couldn't reach the taste that I really want. Maybe my target for this year is making delicious sourdough at home, haha. But for many people, making only simple bread seems to be hard, or complicated. The fact is it's not ^^. With basic and easy to knead recipe, you can create different varieties too. This time, I made simple buns that becomes more delicious by adding different kinds of seeds into the dough, the give bread richer, nuttier with more flavor.
You can use the kind of seed that you like (or have) only don't add too much of them into the dough. If you're allergic to dairy product, you can change the liquid from milk to nut milk too.
